Dominican Style Stewed Chickpeas

(Garbanzos Guisados)

Ingredients

  • 2 16 oz cans of chickpeas

  • 1 small red onion diced

  • 4 cloves of garlic finely minced

  • 2 tablespoons of oil

  • 1 teaspoon of sugar

  • 2 cups of veggie stock

  • 4 small tomatoes

  • 2 cubanella or bell peppers

  • 10 olives chopped plus 3 tablespoons of brine (optional)

  • 1 cup of tomato sauce

  • small bunch of cilantro leaves

  • 1 teaspoon of oregano

  • salt and pepper to taste

Instructions

  1. Drain and rinse chickpeas.

  2. In a pot, heat the oil and add sugar, cook until slightly brown.

  3. Add in the onion, peppers, garlic, tomatoes, chickpeas, and spices and sautΓ© on medium high for about three minutes or until onions begin to turn translucent

  4. Add in the tomato sauce, veggie stock, and olives and bring to a simmer for about 10-15 minutes. Until the sauce begins thicken.

  5. In the last few minutes, add the cilantro (really just want it to release its flavor at the end).

  6. serve and enjoy! We like to add this on top of rice or it makes the perfect side dish to any meal!
